I updated my macOS, and when I try to access an Open or Save dialog, it keeps crashing. So I went to the iCloud system preferences and unchecked Desktop and Documents, but only to find all my files were gone. Are there any possible ways to fix this?

Sure, it is possible to recover your lost iCloud photos and contacts using file recovery software like EaseUS Data Recovery Wizard for Mac to recover your photos like this:
Step 1. You need to download the latest version of EaseUS Data Recovery for Mac because iCloud recovery is the newest feature. Choose iCloud Recovery from the "Recover data from iCloud account" button and click "Next" to log in to your iCloud account.
Step 2. Now, you can choose the "Photo" category. If you want to recover your contact, choose "Contact".Then, click the "Next" button. EaseUS Data Recovery Wizard for Mac will scan your lost photos automatically
Step 3. After the scanning process, you can select the photo you want to restore. You can click the "Recover" button to get them back.
Step 4. Now, choose a safe location on your Mac and save the photos or contacts you recovered from your iCloud.
You can also recover deleted files from iCloud.com. Follow the steps here:
Step 1. Open iCloud.com and log in. In iCloud Drive, click "Recently Deleted" in the sidebar. If you do not see the sidebar, you need to click the Open Sidebar button.
Step 2. If you need to recover all the lost files, click "Recover All" or select the file you want to recover one by one and click "Recover".
It really does work, but this way fails to help when you have permanently deleted your files. In this case, using EaseUS Data Recovery Wizard for Mac is a great solution.
